Healthy Parmesan Chicken Recipe


Healthy doesn't have to mean boring... or bland. In a lot of cases, you can still have your favorite dishes- all you have to do is change a few things like: using olive oil instead of canola or vegetable oil, bake instead of fry, using salt free seasonings and more!  This recipe incorporates the use of olive oil and baking and now, without further ado...

Ingredients
  • 2 tsp. olive oil
  • 1 Tbsp. each of fresh rosemary, thyme, and parsley, chopped
  • ½ tsp. each salt & pepper
  • 1 lb. package chicken tenderloins (could also cut chicken breasts into strips)
  • 2 cups tomato sauce (make sure to get a good brand with minimal ingredients, or make your own)
  • ½ cup shredded mozzarella cheese
  • 2 Tbsp. freshly grated parmesan cheese
Instructions

Preheat oven to 450 degrees. Heat large oven-proof skillet over medium-high heat. Brush one side of cutlets with olive oil, sprinkle with half the salt and pepper and half the fresh herbs.


Place herb-side down into the pan and cook for 2-3 minutes until browned.


Brush top side with olive oil and sprinkle with remaining salt, pepper, and herbs. 
Flip and cook for 2-3 minutes more until both sides are browned.


Remove pan from heat and let cool for 2 minutes. 
Grab your tomato sauce and pour over and around chicken.


Top with cheese and slide pan into oven. Bake until cheese melts, about 5 minutes.

 
And Voila!  There you have it... easy, healthy, chicken parmesan. Enjoy!
