Butternut Squash: Simple and Delicious!

Here is a simple recipe that is my absolute favorite right now! Butternut Squash is in season, and it is so delicious! I like to bring out the sweetness of it with just two ingredients: coconut oil and cinnamon!



1. Preheat oven to 375 degrees.

2. Cut up butternut squash into cubes.

3. Grease baking sheet with coconut oil (about 1/2 tbsp.)

4. Line squash cubes along the baking sheet.

5. Spread coconut oil over the butternut squash (about another 1/2 tbsp.)

6. Sprinkle cinnamon over all the pieces of squash.

7. Place your tray in the oven. Cook for about 25 minutes. You will know when the squash is done when you are able to easily insert a fork into it.


I also like to keep the seeds, sprinkle them with a little salt, and roast them in the oven while the squash is cooking. The seeds will cook much faster. They only need about 7-10 minutes.
